Feedback from membership at the 2024 Droimeann Cattle Society AGM was that market should be developed for Certified Droimeann Beef. John O Halloran spent the autumn and winter of 2024 identifying high end restaurants and building the necessary contacts with the owners and chefs. 2 Droimeann animals were fattened, slaughtered and dry aged for 40 days using a craft butcher Shane McConnell Meats in County Donegal.
The various cuts were provided to these restaurants for blind testing. The feedback from these restaurants was that the meat was of exceptional quality and that they would have no problem serving in their restaurants. They were also captivated by the rich history of the breed.
List of restaurants
· Featherblade
· Seahare
· Caribou

Based on the feedback, a conservation of genetic resources grant was applied for in December 2024 to develop a marketing strategy for certified Droimeann Beef. The society was successful in obtaining a grant in March 2025 to work on a marketing strategy and a restaurant launch to take place in October 2025. (location to be decided)
Chris Towers of Foodstory Ireland have been contracted to work on behalf of the Droimeann Cattle Society to
1) Promote the Certified Droimeann Beef Scheme in print and social media and the restaurant launch
2) Develop a ready made beef box scheme (what goes into a beef box, labelling , legalities etc) that a famer may use to roll out their own beef box scheme.
Additionally, we have had a recent business graduate Hannah Fitzgerald volunteer to help develop material for the scheme and has some exciting ideas on how to promote the beef scheme. Thank You Hannah!
